1 ½ cups whole wheat flour
13 cup fine cornmeal
•1 Tbsp. olive oil
•1 ½ tsp. salt
•½ cup lentils, cooked
•1 Tbsp. millet, ground into powder
•1 ½ cups water
•1 tsp. onion powder
•½ cup sesame seeds
One of the few breads to incorporate lentils in the dough, Palestinian flat bread is great when served with hummus or some other dip.
Preheat oven to 350°F.
Combine flour, cornmeal, olive oil, salt, lentils, millet, and water to make a dough mixture, and flatten onto an oiled baking sheet. Sprinkle with onion powder and sesame seeds. Bake 20 minutes or so. For a crispier cracker, leave in oven an extra 10 minutes.
